
The early bird catches the worm.
I live in the northern part of portugal, in the city of O´porto. I consider myself lucky as I live by the beach and during the summer months we have some amazing weather. It is thankfully bright and sunny on most days. Truthfully I can not complain. We actually have amazing weather all year round compared to the rest of europe, although it can get alittle dark and gloomy during winter, which is to be expected. So nothing like a colorful breakfast to cheer one up and start the day bright. Especially on this rainy morning...
The recipe is actually so simple.
Just a selection of fruit that I have on hand that day, choped up, preferably in small chuncky cubes. This one contains pineapple and tangerines.
Add some greek yoghurt, plain with no added sugar. The fruit themselves contain enough sugar.
And then I like to top it off with a sprinkle of mixed seeds. Just for some added crunch.
